Easter Eggs

When you have 30 dozen (or more) eggs at home, it is hard to justify buying eggs to dye for Easter. The "problem" is that most of our ladies do not lay white eggs. We all know that brown eggs do not dye beautifully. I heard about beautifully dyed hardboiled eggs that are sold regularly throughout the year in Europe. I figured they must do the dyeing while they cook them, so I decided to create my own system and give it a whirl. These photos show my results. The "system" is easy. I took 1/4 c of vinegar, the food dye that I wanted, and 8 cups of water and put it in the pressure cooker (instant pot). I then cooked them on normal pressure for 4 minutes and did a quick release before letting them cool on the counter. For the most part, we really like the colors that emerged...except the green with the dark brown eggs. The "giant olives" look was not our favorite. The color is intense and the ease of peeling from the pressure cooked eggs is fantastic. It takes the fun out of dyeing with the family, but it makes it easy to tell when you have hardboiled eggs in the fridge.
